I haven't tried CentOS 7 yet and there seems to be a lot of changes from CentOS 6.5.

That should work without any changes. I would recommend using enterprise Linux such as CentOS instead of Ubuntu. The setup process is a lot simpler and most changes are backwards compatible. First try to install fog on a clean /tftpboot, then check if your fog setup functions correctly.
If the issue is still there then it is a FOG issue, otherwise the integration of FOG with ERPXE is faulty.

That would work but you should use erpxe-httpd.conf so you won't have to copy the files.
