I haven't tried CentOS 7 yet and there seems to be a lot of changes from CentOS 6.5.
I believe it should work but there may be several changes from our installation instructions.

That should work without any changes. I would recommend using enterprise Linux such as CentOS instead of Ubuntu. The setup process is a lot simpler and most changes are backwards compatible. ERPXE has an 'erpxe-httpd.conf' file that should be placed under /etc/apache2/conf.d/ In Ubuntu 14.04 /etc/apache2/conf.d was replace with /etc/apache2/conf-available so you need to place the file there and ...

Is this a different product then Acronis True Image Home (ATIH)?

First try to install fog on a clean /tftpboot, then check if your fog setup functions correctly.
If the issue is still there then it is a FOG issue, otherwise the integration of FOG with ERPXE is faulty.

That would work but you should use erpxe-httpd.conf so you won't have to copy the files.
